ISO 22000:2018: a new edition of the food safety management standard

In short: The revised ISO 22000 adopts the high-level structure and clarifies risk-based thinking at both organizational and operational levels.

ISO has published ISO 22000:2018, Food safety management systems — Requirements for any organization in the food chain.

Main changes

  • Adoption of the high-level structure, making integration with ISO 9001 and other standards easier
  • A new approach to risk, distinguishing between organizational risk and operational hazard analysis
  • Two Plan-Do-Check-Act cycles: one for the management system and one for the HACCP principles
  • Clearer definitions of key terms such as critical control points, operational prerequisite programmes and prerequisite programmes

Transition

Certified organizations were given three years to transition to the new version. Food safety teams should review their hazard analysis, control measures and documented information against the new requirements.
